Quick Takes 5 – Eating in the Month of John

Last weekend we celebrated Father’s Day (all weekend long), and this weekend we’re celebrating John’s birthday. I use these celebrations as license to break out the big guns in terms of cooking. I found a bunch of new recipes and we have some new favorite dishes! I love June!

Asparagus and Prosciutto in Puff Pastry. I bought the puff pastry for another item farther down the list, but found this recipe at the same time. So easy (as long as you remember to leave enough time to thaw the dough) and so good. These will be on the menu for our next wine tasting!

DAIRY-FREE Caramel Cone Ice Cream. We love Haagen Dazs’ Caramel Cone ice cream, but we’re a dairy-free household. I found a recipe for dairy-free caramel ice cream, then added chunks of dairy-free-chocolate-drizzled waffle cone to imitate the original. Delicious! We love sharing things like this with our little guy. And Henry wants to join in so badly, too; he’s always reaching for our food. Soon, little one. Soon.

Honey Sesame SLOW COOKER Chicken. This is the second “take-out”-style recipe I’ve found that’s Jacob-friendly and made in the slow cooker. (The other is Slow Cooker Coconut Chicken Curry). Basically, you cut up some chicken, throw it in the slow cooker, then mix up a sauce to toss on top. A few hours later you make some rice and bam! dinner. Ordering in isn’t an option for Jacob, and I’m so glad to have found versions of dishes we love that we can share with him.

Pain au Chocolat. John loves these guys, but when bought from a bakery, they’re not Jacob-friendly at all. I knew frozen puff pastry was Jacob-friendly, and we found that Jacob can eat EnjoyLife! brand chocolate chips, so this was a no-brainer. I looked up a recipe anyway, but these are pretty darn simple.

John’s birthday dinner will be a Southern-style marinated pork. We found the recipe in the back of a random local parenting magazine. You never know!

Rather than doing cake, we’re going the cookies and ice cream route for birthday dessert. First, cookies and cream ice cream, made by throwing Oreos into the base of this dairy-free Chubby Hubby recipe.

And as for the cookies, a dairy- and egg-free version of these puppies. That’s right: we’re taking cookies, wrapping them in more cookies, and serving them alongside ice cream with cookies in it. The next weekend, we’re attending a friend’s daughter’s Sesame Street-themed birthday party. Everyone’s dressing up like of the characters. Can you guess who’s going to be Cookie Monster? Seriously? Seriously.
